Why do the skins on potatoes turn green and why does info in health books say not to eat but don't say why?

I have a bunch of baking potatoes where the skins have turned bright green. Why shouldn’t they be eaten? What will it cause, some type of illness? I hate to toss them, cause they aren’t rotten. Thanx.
No more ads for supplements please. . . Any Holistic people out there knowledgeable on the subject of green potatoes and why they should not be eaten?
